At enzymatic hydrolysis any enzyme is used at additional addition of sodium citrate, toluene or ethanol and pancreatin and protosubtilin were used also. Also, beer's yeast suspension can be used preferably as an enzyme. Obtained protein hydrolyzate is used in food, medicinal, microbiological and perfume industry. EFFECT: improved method of protein hydrolyzate preparing.

Сущность способа заключается в том, что боенскую кровь неоднократно замораживают с дефростацией, измельчают и подвергают ферментативному гидролизу в 2 стадии и кислотному гидролизу. При ферментативном гидролизе используют любой фермент и в дополнение к нему вводят цитрат натрия, толуол или этиловый спирт, а также панкреатин или протосубтилин.
