Изобретение относится к области биотехнологии и касается способа получения овомукоида (ОМ) из цельного белка куриных яиц (ЦБЯ). Изобретение наиболее эффективно может быть использовано в технологических процессах выделения индивидуальных протеинов из белка куриных яиц. Задачей настоящего изобретения является разработка экологически более чистого способа получения овомукоида за счет исключения трихлоруксусной кислоты и снижения расхода органических растворителей. Решение поставленной задачи достигается тем, что вместо трихлоруксусной кислоты осаждение сопутствующих протеинов проводят полиэтиленгликолем (ПЭГ), концентрирование овомукоида в супернатанте также проводят полиэтиленгликолем, а очистку ОМ осуществляют ацетоном. Использование предлагаемого способа позволяет исключить применение высокотоксичного реагента - трихлоруксусной кислоты. Вследствие этого предлагаемый способ становится экологически более чистым. Кроме того, способ позволяет более чем в 10 раз сократить расход ацетона по сравнению со способом-прототипом за счет концентрирования овомукоида полиэтиленгликолем.The invention relates to the field of biotechnology and relates to a method for producing an ovomukoid (OM) from whole protein of chicken eggs (CBP). The invention can most effectively be used in technological processes for the isolation of individual proteins from protein of chicken eggs. The objective of the present invention is to develop an environmentally friendly method for producing ovomucoid by eliminating trichloroacetic acid and reducing the consumption of organic solvents. The solution to this problem is achieved by the fact that instead of trichloroacetic acid, the accompanying proteins are precipitated with polyethylene glycol (PEG), the ovomucoid in the supernatant is also concentrated with polyethylene glycol, and OM is purified with acetone. Using the proposed method eliminates the use of a highly toxic reagent - trichloroacetic acid. As a result, the proposed method becomes environmentally friendly. In addition, the method allows more than 10 times to reduce the consumption of acetone compared to the prototype method by concentrating the ovomucoid with polyethylene glycol.
