Abstract
Description
FIELD OF TECHNOLOGY TO WHICH THE INVENTION RELATES
The present invention relates to an oil-in-water emulsion seasoning, in particular, an oil-in-water emulsion seasoning that exhibits reduced stickiness to a container, a pleasant flavor and excellent shape retention.
BACKGROUND OF THE INVENTION
Oil-in-water emulsion seasonings (spices) such as dressings, mayonnaise, and dipping sauce are used in various dishes, including salads and the like, and are widely loved by all. Mayonnaise and dipping sauces having high viscosity and shape retention can also be used as a filling or used to pattern food products and thus can provide visual enjoyment in addition to flavoring.
Commercially available mayonnaises and dipping sauces are packaged in tube-shaped plastic containers and squeezed or tapped near the tips with a small amount remaining. However, there is a problem that mayonnaises and dipping sauces having a high viscosity stick to the wall surfaces of the containers and are difficult to remove from the containers and therefore difficult to use.
Meanwhile, in recent times there has been a growing demand for cholesterol-free food products in the interests of health, and oil-in-water emulsion seasonings such as dressings and mayonnaise have been developed, which are oil-in-water emulsion seasonings. based on eggs. However, if eggs are not used as an ingredient, the stability of the emulsion is low, and therefore it is necessary to add emulsifiers, modified starches and thickening polysaccharides and the like, which adversely affect flavor or shape retention.
Therefore, it is difficult for egg-free oil-in-water emulsion seasonings to achieve emulsion stability, flavor and shape retention similar to those in which eggs are used.
Кроме того, кислый эмульсионный майонезоподобный пищевой продукт, содержащий определенные количества конкретного этерифицированного вещества и загущающего полисахарида, был описан как способ для майонезоподобных пищевых продуктов снизить ухудшение вкусоаромата с течением времени и снизить вязкость, а также обеспечить устойчивую эмульгируемость и хорошую способность сохранять форму (патентный документ 2).Until now, a packaging container having an oil film on the inner surface of the container for contact with an oil-in-water emulsion, such as a mayonnaise-like food product, has been described as a method of reducing stickiness to the container by increasing slipperiness towards viscous and sticky substances (see .patent document 1). In addition, an acidic emulsion mayonnaise-like food product containing certain amounts of a specific esterified substance and a thickening polysaccharide has been described as a way for mayonnaise-like food products to reduce flavor degradation over time and reduce viscosity, as well as to provide stable emulsification and good shape retention (patent document 2).
However, an improvement in the stickiness to the container of the oil-in-water emulsion seasoning itself has not been described. In addition, no method has been described that can solve the problems of container stickiness, flavor and shape retention at the same time.

DETAILED DESCRIPTION OF THE INVENTION
The invention will be described in detail below.
Oil-in-water emulsion seasoning
The oil-in-water emulsion seasoning of the invention contains oil and/or fat, a certain amount of a thickening polysaccharide, and a certain amount of an octenylsuccinic acid-treated starch mixture as ingredients.
In particular, the oil-in-water emulsion seasoning of the invention includes seasonings such as dipping sauces, mayonnaise and mayonnaise-type, and the like. Here, mayonnaise refers to mayonnaise defined in accordance with Japanese agricultural standards, and mayonnaise-type seasonings refer to those that do not meet the definition of mayonnaise in Japanese agricultural standards, but have similar taste, appearance, physical properties and intended use, and the like. Both are defined as semi-solid seasonings under the Japanese Agricultural Standards classification.
The oil-in-water emulsion seasoning of the invention has a viscosity at 20°C of 150 to 300 Pa s, preferably 170 to 280 Pa s, more preferably 180 to 270 Pa s, and most preferably 200 to 250 Pa s ·with. If the viscosity at 20° C. is within the above ranges, the oil-in-water emulsion seasoning of the invention has excellent emulsion stability and shape retention. The viscosity of the oil-in-water emulsion seasoning according to the invention is determined using a BH type viscometer, and the value is measured by rotating the No. 6 rotor twice at a rotation speed of 2 rpm.
20°C.In the invention, the shape retention of an oil-in-water emulsion seasoning means the properties whereby an oil-in-water emulsion seasoning can retain its shape for at least 30 minutes, in particular an oil-in-water emulsion seasoning when squeezed out. through a star-shaped tip, can maintain a linear corrugated pattern on the surface for at least 15 minutes at 20°C.
However, in the invention, stickiness to a container of an oil-in-water emulsion seasoning means the degree of adhesion to a container filled with an oil-in-water emulsion seasoning. Reducing the stickiness of the oil-in-water emulsion seasoning to the container can improve the slipperiness of the oil-in-water emulsion seasoning on the surface of the container and allow the oil-in-water emulsion seasoning to move easily within the container. In this sense, the stickiness to the container in the invention differs from the stickiness measured by a strain gauge.
Кислотность, выраженная в пересчете на уксусную кислоту, здесь измеряется следующим методом (метод титрования нейтрализацией).The oil-in-water emulsion seasoning of the invention preferably has an acidity of 0.5 to 1.5 expressed as acetic acid. If the oil-in-water emulsion seasoning of the invention has an acidity within the above range expressed as acetic acid, the growth of micro-organisms in the liquid seasoning can be suppressed as well as a suitable flavor can be obtained. The acidity, expressed as acetic acid, is measured here by the following method (neutralization titration method).
A 25 ml sample is accurately taken and diluted ten times with water. Then, 25 ml of the diluted sample is taken and placed in a flask, to which two drops of phenolphthalein are added as an indicator, and the mixture is titrated with 0.1 N sodium hydroxide solution with a known correction factor, and the value is obtained by the following formula:
V: average volume (ml) of 0.1 N NaOH standard solution used for titration,
NaOH.F: Correction factor for 0.1 N NaOH standard solution.

The oil and/or fat contained in the oil-in-water emulsion seasoning of the invention is not particularly limited as long as it is an edible oil and/or fat. Examples of oil and/or fat include soybean oil, rapeseed oil, high oleic rapeseed oil, corn oil, sesame oil, sesame salad oil, perilla oil, linseed oil, peanut oil, safflower oil, high oleic safflower oil, sunflower oil oil, high oleic sunflower oil, cottonseed oil, grape seed oil, macadamia oil, hazelnut oil, pumpkin seed oil, walnut oil, camellia oil, tea seed oil, perilla seed oil, borage oil, olive oil , rice bran oil, wheat germ oil, palm oil, palm kernel oil, coconut oil, cocoa butter, beef tallow, lard, chicken fat, milk fat, fish oil, seal oil, seaweed oil and medium chain triglyceride and the like, as well as interesterified oils and/or fats obtained by interesterification of two or more of these oils and/or fats, hydrogenated oils and/or fats obtained hydrogenation of these oils and/or fats, and fractionated oils and/or fats obtained by fractionating these oils and/or fats, and the like. The above oils and/or fats may be used alone or may be used as a mixture of two or more of them.
In addition, the oil and/or fat contained in the oil-in-water emulsion seasoning of the invention is preferably an oil and/or fat that is in a liquid state at 20°C.
The oil and/or fat content of the oil-in-water emulsion seasoning according to the invention is preferably 40 to 70% by weight, more preferably 50 to 70% by weight, even more preferably 52 to 65% by weight, and most preferably from 55 to 60 wt.%. If the oil and/or fat content is within the above ranges, then the oil-in-water emulsion seasoning of the invention has excellent flavor and shape retention. If the content of oil and/or fat is less than 40 wt.%, then the ability to keep the shape deteriorates. This necessitates the addition of more thickening polysaccharide or octenylsuccinic acid treated starch to provide shape retention, which may result in less flavor or less stickiness to the container. On the other hand, if the content of oil and/or fat exceeds 70% by mass, then the amount of water is low. This results in poor texture and reduced emulsion stability, and may result in less loss of stickiness to the container.

The content of the first octenylsuccinic acid treated starch is 25 to 60 wt.%, preferably 26 to 55 wt.%, even more preferably 27 to 50 wt.%, even more preferably 28 to 45 wt.% and most preferably 30 up to 40 wt.%, relative to the total mass of the mixture of starch treated with octenylsuccinic acid. If the content of the first octenylsuccinic acid-treated starch relative to the total weight of the octenylsuccinic acid-treated starch mixture is within the above ranges, the oil-in-water emulsion seasoning of the invention exhibits excellent reduced stickiness to the container.
The content of the mixture of starch treated with octenylsuccinic acid in the oil-in-water emulsion seasoning according to the invention is from 1.5 to 4.0 wt.%, preferably from 1.6 to 3.5 wt.%, more preferably from 1, 8 to 2.0 wt.% and most preferably from 2.0 to 2.5 wt.%. If the content of the octenylsuccinic acid-treated starch mixture is within the above ranges, the oil-in-water emulsion seasoning of the invention has excellent emulsion stability and shape retention.
The starch treated with octenylsuccinic acid is not particularly limited as long as the viscosity meets the above requirements, and vegetable starches (potato starch, tapioca starch, corn starch, waxy maize starch, and the like) or products obtained by esterifying their hydrolysates with octenylsuccinic acid can be used accordingly. . Examples of the octenylsuccinic acid-treated starch obtained by esterification include the octenylsuccinic acid-treated starch in which one of the carboxylic groups of octenylsuccinic acid and the starch or its hydrolyzate form an ester. In octenylsuccinic acid-treated starch containing such esters, the other carboxylic group of octenylsuccinic acid not included in the ester may be free and may form a sodium, potassium, ammonia or amine salt and the like. Considering that the effects of the invention are easily manifested, it is preferable to use an octenylsuccinic acid-treated starch in which the other non-ester carboxylic group of octenylsuccinic acid forms a sodium salt (i.e. starch sodium octenylsuccinate). The feed starches for the first octenylsuccinic acid-treated starch and the second octenylsuccinic acid-treated starch may be the same kind of starch or starches of different kinds.
The method for adjusting the viscosity of the first and second octenylsuccinic acid-treated starches includes a method in which the octenylsuccinic acid-treated starch obtained by esterifying the aforementioned starch (or a hydrolyzate of the aforementioned starch) with octenylsuccinic acid is subjected to, for example, acid hydrolysis with hydrochloric acid or sulfuric acid and the like. or enzymatic hydrolysis by amylase. Alternatively, the viscosities of the first and second octenylsuccinic acid-treated starches can be controlled by mixing two or more kinds of starches having viscosities within the above ranges defined for the first and second octenylsuccinic acid-treated starches.
The viscosities of the first and second starches treated with octenylsuccinic acid are determined using a BM-type viscometer and measure the value when rotor No. 1 rotates twice at 60 rpm (or at 6 rpm in the case of more than 500 mPa⋅s) in 10 wt.% aqueous solution maintained at a temperature of 20°C.

A specific example of the process for producing an oil-in-water emulsion seasoning according to the invention will be described below. To produce the oil-in-water emulsion seasoning of the invention, all ingredients other than oil and/or fat are first charged into a heated mixing tank and then mixed and stirred while the mixing tank is heated, resulting in a portion of the aqueous phase. The heating and stirring conditions are not particularly limited as long as uniform dispersion, mixing and, if required, sterilization of the ingredients can be achieved. The heating and stirring can be carried out at elevated pressure, reduced pressure and normal pressure, and is usually carried out at normal pressure. The heating temperature is not particularly limited as long as the ingredients are mixed and sterilized, and is generally 40°C to 95°C, preferably 60°C to 95°C. Heating can be omitted if not required.
Mixing is carried out under conditions that ensure uniform dispersion and the like of the ingredients.
Затем масло и/или жир добавляли в часть водной фазы и эмульгировали при пониженном давлении в течение 20 минут с использованием лопастного смесителя при 100 об/мин, а также с использованием гомогенизатора при 5500 об/мин, таким образом, получая м майонезоподобную эмульсионную приправу типа масло-в-воде (примеры 1-11 и сравнительные примеры 1-4).Oil-in-water emulsion seasonings (mayonnaise type) according to the invention were prepared in accordance with the recipes shown in tables 1-3. Specifically, ingredients other than oil and/or fat were charged into a vessel equipped with a mixer and stirred at ambient temperature for 10 minutes while stirring with a paddle mixer at 100 rpm, thereby preparing a portion of an aqueous phase. Then, oil and/or fat was added to a portion of the aqueous phase and emulsified under reduced pressure for 20 minutes using a paddle mixer at 100 rpm and also using a homogenizer at 5500 rpm, thereby obtaining a mayonnaise-like emulsion seasoning of the type oil-in-water (examples 1-11 and comparative examples 1-4).
1-3.The water content, acidity and viscosity of the oil-in-water emulsion seasoning were determined by the measurement methods described above. The stickiness (other than the assessment of stickiness to the container) was also determined by an instrument capable of measuring the compressive strength of a substance by linear movement (RE-33005 RHEONER (manufactured by YAMADEN)), so that each oil-in-water type emulsion seasoning cooled to 20° C, was loaded to a height of 15 mm into a container with a diameter of 40 mm and a height of 15 mm and compressed once at a compression speed of 10 mm/s with a gap of 5 mm by a polymer piston with a diameter of 20 mm and a height of 8 mm. The measurement results are shown in tables 1-3.

Container stickiness rating
фиг.2).The stickiness to the container was evaluated as follows. Specifically, 220 ml tube-shaped free-standing plastic containers (trade name: MSB-M200, manufactured by KYORAKU Co., Ltd.) were filled with 100 g of oil-in-water emulsion seasoning prepared as described above (Examples 1- 11 and Comparative Examples 1-4) and then tapped sufficiently so that the oil-in-water emulsion seasonings adhering to the wall surfaces slide down to tightly fill the bottom of the containers (see FIG. 1). Next, the weight of the filled plastic containers (A) was measured. After that, the containers were placed upside down and left to stand at room temperature for 15 hours (see figure 2).
Then, the inverted plastic tube-shaped containers were cut horizontally with scissors at a vertical distance of 12 cm from the bottom edge, and the weights of the lower parts of the plastic tube-shaped containers (B) were measured. Next, the proportion of the oil-in-water emulsion seasoning slipped down by its own weight was calculated by the following formula.
Доля соскользнувшей вниз эмульсионной приправы типа масло-в-воде (%)=B/A×100Sliding down proportion of oil-in-water emulsion seasoning (%)=B/A×100
It is understood that the larger the proportion of the oil-in-water emulsion seasoning that has slipped down, the less adherence to the container, and the easier the oil-in-water emulsion seasoning will move within the container.
4.Thereafter, taking into account the proportion of oil-in-water emulsion seasoning that slipped down (%), evaluation was performed according to the following evaluation criteria. The evaluation results are shown in Table 4.
