С этой целью отбирают 5,0 г образца меда, растворяют в 100 см3 деионизованной воды и вводят пробу в хроматографическую колонку REZEX RCM 300×7,8 мм, предназначенную для определения содержания сахаров. Пробу элиминируют водой со скоростью 0,6 см3/мин при температуре 60-80°С, детектируют выход и определяют массовую долю фруктозы, глюкозы и мальтозы рефрактометрически по площадям хроматографических пиков. Хроматографирование повторяют не менее шести раз для каждого образца. Результаты обрабатывают статистически по стандартной методике. Погрешность определения не превышает 0,2% при доверительной вероятности 95%, что обеспечивает высокую воспроизводимость результатов измерения. Из полученных результатов вычисляют суммарную массовую долю фруктозы и глюкозы, их соотношение. Затем в образцах исследуют диастазное число по стандартной методике (ГОСТ 19792-2001). Далее идентифицируют гречишный мед по совокупности следующих признаков: суммарное содержание глюкозы и фруктозы находится в пределах диапазона 57,3-61,6 мас.%, отношение масс фруктозы и глюкозы находится в пределах диапазона 1,13-1,17, содержание мальтозы составляет 4,6-5,0 мас.%, диастазное число - 30-52 ед.
