Недостатком известного способа является длительность технологического цикла, использование дорогостоящих экстрактов медоносных растений (по второму варианту). По достижении 10,0-11,0% об. спирта и 50-60 г/дм3 сахара частично сброженное сусло фильтруют и пастеризуют, разделяют на две части, меньшую из которых 25-35% подвергают второй стадии брожения в аппарате с насадкой. Дображивание проводят при контактировании с иммобилизованными дрожжами, количество которых в зоне наполнителя составляет 150-250 млн кл./см3. Брожение оканчивают при содержании сахара в среде не более 10 г/дм3. Сброженное в аппарате сусло объединяют с большей частью потока. Предлагаемый способ отличается от известного тем, что исключается необходимость дробного внесения меда при брожении. Это наряду с обеспложивающей фильтрацией обеспечивает чистоту брожения, а дображивание на второй стадии с участием иммобилизованных на насадке дрожжей позволяет интенсифицировать процесс дображивания, в т.ч. за счет улучшения контакта сусла с большим количеством дрожжевых клеток, и обеспечивает обогащение сусла в процессе брожения биологически активными веществами, что способствует повышению жизнедеятельности дрожжей. В органолептике вина сохраняются медовый аромат и вкус. Использование красносмородинового сока взамен лимонной кислоты не только обеспечивает оптимальное значение pH сусла перед брожением, но и позволяет улучшить органолептические свойства медового вина наряду с использованием в купаже сброженного сусла, обогащенного биологически активными веществами.The proposed method differs from the known one in that it eliminates the need for fractional introduction of honey during fermentation.
