Abstract
Description
The invention relates to a technology for storing potatoes.
к.б.н. 20-21).A known method of preparing potatoes for storage, providing for their processing with a chemical pesticide (Ivakhnenko O.A. Species composition, distribution of entomopathogenic nematodes and their effectiveness against the main pests of potatoes in the Krasnodar Territory. Abstract of thesis, Ph.D. - Krasnodar: VNIIIBZR, 2001 , p.20-21).
The disadvantage of this method is the danger to humans and the inability to use when processing food products.
10-95).There is a method of preparing crop products, including potatoes, for storage, providing for its irradiation (Metlitsky L.V., Rogachev V.I., Khrushchev V.G. Radiation processing of food products - M .: Economics, 1967, p.10 -95).
This method is acceptable for both seed and ware potatoes, but reduces its keeping quality due to impaired immune status and enzyme activation, and also leads to a decrease in the organoleptic characteristics of food potatoes and to a decrease in seed germination.
It should be noted that both of these methods are applicable for the destruction of microflora and harmful insects located on the surface of potatoes, but are ineffective against insects that have penetrated under the skin.
44-45).Closest to the proposed technical essence is a method of preparing crop products, including potatoes, for storage, providing for the processing of an immunostimulant, in particular chitosan (Kvasenkov OI, Yushina EA Fundamentals of technology for storing plant products using natural immunostimulants / / Materials of the international scientific-practical conference "Food Industry of the South of Russia. Environmentally friendly energy-saving technologies for storage and processing of raw materials . Nogo and animal origin "Part II - Krasnodar. KNIIHP, 2000, s.44-45).
This method, unlike the previous ones, does not allow to destroy harmful insects in general, but increases the immune status, germination and keeping ability of potatoes, does not change its organoleptic properties.
The technical result of the invention is to ensure the destruction of harmful insects without violating the immune status of potatoes, without compromising its organoleptic properties and germination.
This result is achieved by the fact that in the method of preparing potatoes for storage involving treatment with chitosan according to the invention, chitosan is used as part of a preparation further comprising a suspension of Steinernema caprocapsae in an amount of about 99% by weight.
The method is implemented as follows.
For potato processing, a suspension of entomopathogenic nematodes Steinernema caprocapsae is prepared with the addition of about 1% by weight of chitosan. With an increase in the amount of chitosan, the drug gels, which makes it difficult to use it for its intended purpose, and with a decrease in the content of chitosan the specified technical result is not achieved. Potatoes are sprayed with a freshly prepared preparation, preferably during transportation on a conveyor belt when loading into storage. This ensures sufficient uniformity of processing of all tubers. On processed potatoes, nematodes penetrate the passages left by harmful insects and affect them both on the surface and inside the tubers. Since nematodes are not adapted for life in the open air, and chitosan does not have nematicidal activity against nematodes of the species Steinernema caprocapsae, it protects nematodes from drying out and death, which increases the processing efficiency. Used nematodes are harmless to humans and do not damage potato tubers on their own. Insects infected with nematodes die, not having time to cause significant harm to potato tubers. At the same time, chitosan, as a stimulant of the protective reactions of higher plants, enhances the immune status of potatoes, which increases its keeping quality, as well as the germination capacity of seed potatoes.
To confirm the achievement of the technical result, potatoes affected by potato moths were treated with a suspension of Steinernema caprocapsae with a titer of invasive larvae from 1000 to 6000 individuals / ml with the addition of 1% by weight of chitosan, as well as a suspension of nematodes and chitosan separately at the same concentration. When the working fluid flow rate was 70-100 ml per 1 kg of potato, the separate use of nematodes and chitosan was ineffective and led to the complete destruction of the potato by the larvae of potato moth, the biological effectiveness of the proposed preparation, estimated by the potato preservation, was not less than 90.1% and reached the maximum 96% The immune status of the experimental potato did not change compared to the reference, which was not affected by potato moth and was treated with chitosan according to the closest analogue. Germination compared to the standard is slightly reduced with a difference depending on the time of potato moth damage before processing. The organoleptic characteristics of culinary and canned products obtained from potatoes processed by the proposed method and from control potatoes not affected by pests and not subjected to any processing at all are the same. The amount of waste in the processing of potatoes processed by the proposed method is slightly higher than that of the control potato, due to the localization of the moves of the larvae of potato moths in the peripheral areas of tubers, but does not exceed traditional waste standards.
Thus, the proposed method allows for the destruction of harmful insects during storage of potatoes without negative impact on its immune status, germination and organoleptic properties.
