Опытным путем установлено, что консервы, полученные по предлагаемому способу, обладают более высокой цветостабильностью по сравнению с наиболее близким аналогом, что, вероятно, объясняется наличием в препарате из биомассы микромицета Pythium ultimum полиненасыщенных жирных кислот.
