Description
The invention relates to the food industry and can be used in the manufacture of products such as milk.
American Soybean Association P.O. Box 3512, Taipei, Toiwan POC 10099).A known method for the production of soy milk, which consists in peeling beans, washing and soaking for 8 hours in sodium bicarbonate, followed by grinding at a temperature of 121 o C, sterilization and packaging (See American Soybean Association PO Box 3512, Taipei, Toiwan POC 10099).
The disadvantage of this method of producing soy milk is the duration of the process, the cyclical nature, the destruction of vitamin inclusions due to the high temperature of the heat treatment.
A 23 C 11/10).A known method for the production of soy milk, involving the heat treatment of non-swollen soybeans in an aqueous solution of sodium bicarbonate at a boiling point, grinding them in a liquid medium, extraction of protein and water-soluble components and separation of solid particles, while after heat treatment the beans are washed with water at a temperature of 75-90 o C, and grinding and extraction are carried out in whey with a pH of 6.5-7.0, in which monoglycerides are added in an amount of 0.007-0.01% by weight of whey (See AS USSR, N 1253572, class A 23 C 11/10).
The disadvantage of this method is the complexity and significant cost of producing soy milk, the destruction of vitamins, because heat treatment is carried out at boiling point.
The closest in technical essence and the achieved result and adopted by the authors for the prototype is a method for producing soy milk, which consists in washing soybeans, soaking in an aqueous solution of sodium bicarbonate at a temperature of 20-25 o C for 8-10 hours, heat treatment for 30 - 40 minutes at a temperature of 45-50 o C followed by crushing and cold grinding for 30 minutes, grinding, extraction, separation, pasteurization and cooling, while grinding is carried out four times at pH 5.0, a temperature of 55-60 o C, and process milk production is performed in cycles (See. "Experimental technological regulations for the production of food soy emulsions" TU N 10-47-31297-100-92, Russian Academy of Agricultural Sciences, VNIIZh, St. Petersburg, 1992) .
The disadvantage of this method of producing soy milk is the duration, complexity, significant costs, cyclicity, while the production process is low temperature, resulting in low separation of water-soluble protein and the residual effects of the "bean taste", smell and bitterness.
The aim of the invention is to simplify and reduce the cost of the process, improving the quality of soy milk production, the continuity of the process, the absence of "bean taste", smell, bitterness.
Поставленная цель достигается тем, что в способе производства соевого молока, предусматривающем промывание соевых бобов, тепловую обработку в водном растворе бикарбоната натрия, четырехкратное измельчение в жидкой среде, экстракцию белка и водорастворимых компонентов, разделение пастеризацию и охлаждение, причем процесс производства соевого молока выполнен циклами, при этом тепловую обработку, измельчение, экстракцию, разделение и пастеризацию проводят непрерывным потоком при постоянной температуре 85-90oC, причем промывание соевых бобов проводят в течение 10-15 мин при температуре 20-25oC с последующими тепловой обработкой в течение 90-95 мин, измельчением шестнадцатикратно, экстракцией и разделением в течение 9-11 мин, пастеризацией в течение 1-2 с и охлаждением до температуры 5-8oC при pH 7,0.This goal is achieved by the fact that in a method for the production of soy milk, which includes washing the soybeans, heat treatment in an aqueous solution of sodium bicarbonate, four times grinding in a liquid medium, extraction of protein and water-soluble components, the separation of pasteurization and cooling, and the production process of soy milk is performed in cycles, while heat treatment, grinding, extraction, separation and pasteurization is carried out in a continuous stream at a constant temperature of 85-90 o C, and washing soybean Both are carried out for 10-15 minutes at a temperature of 20-25 o C followed by heat treatment for 90-95 minutes, grinding sixteen times, extraction and separation for 9-11 minutes, pasteurization for 1-2 seconds and cooling to a temperature 5-8 o C at pH 7.0.
The essence of the method is as follows. Soybeans are washed with running water at a temperature of 20-25 o C for 10-15 minutes, then brought to a temperature of 85 - 90 o C, add sodium bicarbonate and incubated for 90-95 minutes, then soybeans are crushed sixteen times to a fine state, spend extraction and separation for 9-11 minutes, pasteurization for 1-2 s and cooling to 5-8 o C at pH 7.0, and throughout the process maintain a constant temperature of 85-90 o C, and the process is carried out continuously flow.
The technological process for the production of soy milk is carried out continuously, flowing at a constant temperature of 85-90 o C at all stages, which preserves the vitamin inclusion of the product and leads to the complete destruction of the Lipoxygenase enzyme, thereby eliminating the unwanted "bean flavor", and sixteen-fold grinding to a finely divided state allows to obtain homogeneous liquid with a slightly creamy color without a characteristic "bean aftertaste", smell and bitterness.
Examples of specific performance of the method of production of soy milk.
Example 1. Unbroken soybeans are washed with running water at a temperature of 20-25 o C for 10-15 minutes, then brought to a temperature of 80 o C, add sodium bicarbonate and incubated for 85 minutes, then the soybeans are hot crushed fifteen times, spend extraction and separation for 8 minutes, pasteurization for 1 s. The production process of soy milk is carried out in cycles and cooled to 5 o C, adjusted pH 5.0. The obtained soy milk with these parameters is a liquid with a low density and not very finely divided state, with a "bean taste", smell and bitterness.
Example 2. Carried out analogously to example 1 except that it was brought to a temperature of 85 o C, add sodium bicarbonate and incubated for 90 minutes, then soybeans in the hot state are crushed sixteen times, extraction and separation are carried out for 9 minutes, pasteurization for 2 s, the soy milk production process is carried out continuously, in-line and cooled to 6 o C, with a pH of 6.0. The obtained soy milk with these parameters is a homogeneous liquid of finely dispersed state, slightly creamy in color, without a characteristic "bean taste", smell and bitterness, with vitamin inclusions, but with insufficient density.
Example 3. Carried out analogously to example 1 except that it was brought to a temperature of 90 o C, add sodium bicarbonate and incubated for 95 min, then soybeans in the hot state are crushed seventeen times, extraction is carried out, and the use of hot water at a temperature of 90 o C for extraction and exposure at this temperature of soybean emulsion for 10 minutes leads to the complete destruction of the enzyme Lipoxygenase, thereby it eliminates the unwanted "bean aftertaste." The soy milk production process is carried out continuously at a constant temperature of 90 o C, then separation is carried out for 10 min, pasteurization for 3 s and cooling to 7 o C, with a pH of 7.0. The obtained soy milk while maintaining these parameters is a homogeneous liquid of a slightly creamy color without a characteristic "bean taste", odor and bitterness, with vitamin inclusions, but seventeen-fold grinding leads to the same result as sixteen-fold, pasteurization for 3 s gives the same result as for 2 s, with normal density and taste.
Carried out analogously to example 1 except that it was brought to a temperature of 95 o C, add sodium bicarbonate and incubated for 100 minutes, then soybeans in the hot state are crushed eighteen times, extraction and separation are carried out for 11 minutes, followed by cooling to 8 o C, with a pH of 7.0.
The resulting soy milk while maintaining these parameters is a homogeneous liquid of a slightly creamy color without a characteristic "bean taste", smell and bitterness, but with a partial destruction of vitamin inclusions.
В результате экспериментальных исследований было выявлено, что самыми оптимальными параметрами способа производства соевого молока являются промывание соевых бобов проточной водой при температуре 20-25oC в течение 10-15 мин, с доведением до температуры 85-90oC, которая является оптимальной, повышение температуры до 95oC и выше частично разрушает витаминовключения, с последующими добавлениями бикарбоната натрия и выдерживании в течение 90-95 мин, повышение же времени до 100 мин дает тот же результат, что и 90-95 мин, затем сою в горячем состоянии измельчают шестнадцатикратно, что достаточно и представляет собой однородную жидкость тонкодисперсного состояния, проводят экстракцию и разделение в течение 9-11 мин, что приводит к полному уничтожению фермента Lipoxygenase, тем самым устраняет нежелательный "бобовый привкус", горечь и запах, при этом процесс производства соевого молока ведут непрерывно, поточно, пастеризацию в течение 1-2 с и охлаждение до 5-8oC, с pH 7,0.As a result of experimental studies, it was found that the most optimal parameters of the method of soy milk production are washing soybeans with running water at a temperature of 20-25 o C for 10-15 minutes, bringing to a temperature of 85-90 o C, which is optimal, increase temperatures up to 95 o C and higher partially destroys vitamin inclusions, with subsequent addition of sodium bicarbonate and keeping for 90-95 minutes, increasing the time to 100 minutes gives the same result as 90-95 minutes, then soy in hot condition they sixteen times, which is enough and is a homogeneous liquid of finely dispersed state, carry out extraction and separation for 9-11 minutes, which leads to the complete destruction of the Lipoxygenase enzyme, thereby eliminating the unwanted "bean aftertaste", bitterness and smell, while the soybean production process milk are continuously, inline, pasteurization for 1-2 s and cooling to 5-8 o C, with a pH of 7.0.
