Способ управления процессом стерилизации консервов, основанный на F-эффекте, включающий непрерывное измерение температуры в наименее прогреваемой точке консервов для определения фактического стерилизующего эффекта Fи его сравнение с заданным значением F, отличающийся тем, что определяют разность между F-F, в зависимости от этой разности осуществляют подачу пара в стерилизационную камеру до достижения значения фактического стерилизующего эффекта F, равного 70-75% от F2.
