Claims (3)

1. Способ получения гликопептидов, предусматривающий культивирование молочнокислых бактерий на питательной среде, содержащей молоко, отделение биомассы молочнокислых бактерий, разрушение их клеточных стенок, фракционирование гликопептидов мембранными методами и хроматографией и сушку, отличающийся тем, что молочнокислые бактерии культивируют на питательной среде, содержащей 3-10% обезжиренного сухого молока, 0,5-1,0% дрожжевого экстракта и 3,5-12% общих сахаров, полученную культуральную жидкость обрабатывают кислыми протеолитическими ферментами и разделяют на биомассу и молочнокислую сыворотку, которые для получения целевого продукта и сопутствующих ему биологически активных веществ обрабатывают раздельно: молочнокислую сыворотку подвергают ультрафильтрации с получением из высокомолекулярной фракции цинксодержащего белкового комплекса, а из низкомолекулярной фракции - молочной кислоты и ее солей, а биомассу молочнокислых бактерий для разрушения клеточных стенок подвергают воздействию ультразвуком или обработке "замораживание-размораживание", кипячению и обработке лизоцимом, после чего из суспензии лизоцимного гидролизата отделяют водонерастворимые гликопептиды, а из оставшейся жидкой фазы выделяют водорастворимые гликопептиды методами микро-, ультра-, нанофильтрации и хроматографией.1.
