Abstract

The invention belongs to the field of chemical instrumental technique, ie. in the field of testing stable isotopes in analytes from food products, and refers to the procedure of preparation of ethanol in water of the tested product and determining the relative ratio of non-exchangeable stable isotopes of hydrogen in the prepared ethanol (δDnII value of ethanol from product water), in order to detect added water. In this sense, the invention is related to the process of preparation of ethanol in water from the test product, which arises as a product of fermentation of fermentable sugar reagent under certain and specific analytical conditions, and further measurement of the relative ratio of non-exchangeable stable hydrogen isotopes in ethanol prepared and isolated in such way by using apparatus for determining the isotopic composition of non-exchangeable hydrogen and deuterium atoms in ethanol samples, which is based on IRMS (Isotope Ratio Mass Spectrometry) instrumental technique.
