Abstract

Probiotske bakterije ce dodaju y otopljenu čokoladnu masu pri temperaturi nižoj od 49°C i to u količini kojom će ce postići koncentracija veća od 106 ćelija po gramu čokolade kako bi ce postigao zdravstveni efekat kod konzumenata. Da bi ce potvrdila funkcionalnost i čokolada bila probiotska, neophodna je kontrola (provera) prisutnog broja probiotika tokom čuvanja čokolada, čime ce determiniše njen rok trajanja kao funkcionalnog probiotskog proizvoda, kojim ce ostvarujepozitivan efekat na zdravlje potrošača.
