Abstract
Procedeul consta în aceea ca în scopul oxidarii unei cantitati mari de D-sorbita la L-sorboza indroducerea D-sorbitolului în mediu de fermentatie se face treptat pe parcursul fermentatiei pornind de la concentratia initiala de 15...20% si ajungând înfinal, în decurs de 60h la 38% sorbitol, reinocularea mediului la 24h de la pornirea fermentatiei si folosirea unui inocul tînar de 12...14h.
