Abstract

The invention relates to a method of dynamic control of temperature and humidity parameters in an industrial bread proofer. According to the invention, the method comprises the following stages: measuring, with a sensor (3), the amount of carbon dioxide released during fermentation by the pieces of dough (2) within a proofer (1), comparing the carbon dioxide measured value with a standard value where, depending on the comparison result, a PLC (10) controls the lowering or raising of the temperature and humidity values inside the proofer (1), by opening a hot water electrically-operated valve (5) or a cold water one (6) for temperature control and a steam electrically-operated valve (7) for humidity control, respectively.
