Abstract
Przedmiotem zgłoszenia jest sposób dekompozycji płatków owsianych, który polega na pełnym wykorzystaniu suchej substancji płatków owsianych poprzez ich bezpośrednią obróbkę enzymatyczną amylolityczną jednoetapowo i, jednocześnie, dwoma enzymami amylolitycznymi: dekstrynującym i maltogennym w środowisku wodnym, w tym samym pH 6-7, w tym samym czasie nie dłuższym niż 10 godzin i w temperaturze poniżej 50°C (tj. poniżej kleikowania skrobi zawartej w płatkach), oddzieleniu frakcji stałej, włóknistej (o zmniejszonej zawartości skrobi i białka, a zwiększonej zawartości błonnika w stosunku do surowca wyjściowego) od frakcji płynnej (zawierającej głównie cukry i białka). Pomimo rożnego składu odżywczego i innych właściwości funkcjonalnych, obydwie frakcje wykazują walory prozdrowotne. W celu zabezpieczenia mikrobiologicznego produktów, prowadzi się suszenie lub zamrażanie frakcji stałej, włóknistej, w przypadku frakcji płynnej pasteryzację, sterylizację albo suszenie lub zamrażane.
