Abstract
1. Sposób otrzymywania niskoscukrzonych hydrolizatów skrobiowych na drodze hydrolizy enzymatycznej, w określonych warunkach pH i temperatury, znamienny tym, że hydrolizę skrobi prowadzi się dwustopniowo, w pierwszym stopniu za pomocą enzymu bakteryjnej alfa-amylazy do uzyskania hydrolizatu o DE rzędu 5-7, a w drugim stopniu za pomocą enzymu glukogennego lub maltogennnego względnie ich mieszaniny, przy czym procesy hydrolizy enzymatycznej prowadzi się w temperaturze 55-60°C w warunkach pH 4,5-5,0 i w czasie 20-120 minut, a otrzymane hydrolizaty, po rafinacji i filtracji, poddaje się procesowi suszenia.1. Przedmiotem wynalazku jest sposób otrzymywania niskoscukrzonych hydrolizatów skrobiowych w postaci proszku, charakteryzujących się nowym i korzystnym składem węglowodanów oraz właściwościami - dobrą rozpuszczalnością i małą tendencją do retrogradacji w roztworze.The subject of the invention is a method of obtaining low-sugar starch hydrolysates in the form of a powder, characterized by a new and advantageous carbohydrate composition and properties - good solubility and a low tendency to retrogradation in solution.
Znane są powszechnie metody otrzymywania niskoscukrzonych hydrolizatów skrobiowych tzw. maltodekstryn w postaci proszku, o niskim stopniu scukrzenia 5-30 DE przy zastosowaniu jednego enzymu - bakteryjnej alfa amylazy. Skład węglowodanowy tych produktów charakteryzuje się niską zawartością cukrów prostych - glukozy i maltozy. Maltodekstryny o DE (stopień destrynizacji skrobi) 9-12 produkowane przez firmę CPC International zawierają: 1% glukozy, 4% maltozy, 5% maltotriozy, a o DE 17-20 zawierają: 1% glukozy, 7% maltozy i 9% maltotriozy. Maltodekstryny o DE 9-11 produkowane przez firmę Amylum zawierają -1% glukozy, 4% maltozy i 5% maltotriozy, a o De 13-17 zawierają 1% glukozy, 3% maltozy, 5% maltotriozy. It turns out that the low degree of saccharification of the hydrolysates is related to the low stability of the maltodextrin solution and an increased tendency to turbidity at higher concentrations. There are known attempts to improve these properties, one of which, according to US Patent No. Am. No. 3,974,033 is based on the use of oxidized starches, which reduces the viscosity and increases the solubility of the final product. Instability of maltodextrin solutions, i.e. progressive turbidity up to and including solidification, and susceptibility to microbial contamination, especially mold and yeast, are limited by reducing the pH and increasing the temperature, which is accompanied by a reduced probability of joining shorter polysaccharide chains (US Patent No. 4 689 088). Reverse osmosis technique is used to obtain non-opalescent, low-sugar hydrolysates (US Patent No. 3,756,856).
