Abstract

The present utility model discloses an easy and fast process of producing tuna jerky preserved using natural plant extract. The said process comprising the steps of: a) washing, filleting or cutting into loins, layering, and freezing the loins; b) skinning, cleaning and slicing or trimming the frozen loins; c) curing the cleaned fish meat slices using natural plant extract and spices; and d) drying, cooling, packing and storing the tuna jerky. The curing marinade used further comprising of 0.35-0.4 pcnt black pepper, 0.35-0.4 pcnt garlic, 15-16 pcnt vinegar, 6-7 pcnt salt, 34-36 pcnt sugar, 34-36 pcnt water and 3.5-8.5 pcnt ginger extract
