Abstract

The present utility model discloses a process of making jackfruit (Artocarpus heterophyllus) and sweet potato (ipomoea batatas) ice cream comprising the steps of: washing and sanitizing the sweet potato and jackfruit trimmings, steaming the cleaned sweet potato for about 20 minutes, peeling and cutting the steamed sweet potato, adding water in a ratio of 2:1 and homogenizing said sweet potato, blending the jackfruit trimmings and homogenizing said jackfruit trimmings, pasteurizing the milk with other dry ingredients at 72øC for 10 minutes, aging the pasteurized milk, adding the flavorants and beating the pasteurized milk to produce a foamy mixture, putting the mixture at a -25øC temperature for 15 minutes and agitating said mixture for 2 minutes, repeating the same process for 2 hours, freezing the mixture at -25øC for 10 minutes, storing the mixture into smaller containers, and freezing again the mixture until it turns into ice cream.
