Abstract

This utility model relates to a muffin containing star-apple (Chrysophyllum caimito) and mango (Mangifera indica) as main ingredients and to the process of making the same which comprises the following: 1) chopping the star-apple and mango pieces 2) preparing and mixing the dry mixture by sifting and mixing the flour, baking soda, baking powder, and iodized salt; 3) preparing the wet mixture by adding the sugar and oil into beaten eggs in a separate bowl; 4) mixing the wet mixture with the dry mixture; 5) adding chopped star apple and mango into the mixture; and 6) baking for 15-25 minutes at 350øF. The incorporation of star-apple and mango fruit pieces into the muffins improved the flavor and appearance of the product, which can lead to a good impression and interest to the consumers. Fruit bits added made the muffins more palatable and appetizing. The finished product decorated with whipped cream frosting and sprinkles is given the name "Muffcake"
