Abstract

The process of producing sausage was developed to provide new variant of sausage with added nutritional value and to reduce the meat content of sausages using banana blossom as meat fillers. The process of producing sausage from banana blossom is done by preparing banana blossoms by removing its outer bracts; preparing the other ingredients like meat, salt, accord powder, sugar, garlic, anisado wine, and pineapple juice; chopping and then grinding of banana blossom; soaking of the grind banana blossom into citric acid to prevent from enzymatic browning; draining and removing excess water of banana blossoms; mixing all the ingredients; stuffing the mixed ingredients into sausage casing; stemming for 2-3 minutes; letting the sausages to cool; packing of the sausages then refrigerates.
