Abstract
A method for preparing nucleic acids encoding polyphenol oxidase (PPO), fragments and derivatives thereof. The nucleic acids encode banana, tobacco or pineapple PPO, or antisense to banana, tobacco or pineapple PPO, fragments and derivatives thereof. Vectors including such nucleic acids, methods of using such nucleic acids and transgenic plants are also provided.
