Abstract

A process for altering the sucrose level in a pea plant by reducing plastidial phosphoglucomutase (PMG(p) activity. The process involves reducing the activity of PMG(p) by introducing a mutation into the PMG(p) polynucleotide sequence. Also described is a vector which comprises at least part of the PMG(p) polynucleotide sequence and a process for the production of frozen peas with an increased sucrose content.
