Abstract
Fremgangsntåte for henuning av misfarging av bearbeidet, fersk brokkoli, omfattende behandling av brokkolien for konsumering i fersk tilstand og eksponering av den bearbeidede, ferske brok- koli for en løsning av natriumsitrat, ascorbinsyre, natrium- pyrofosfatsyre og L-cysteinhydroklorid, i vekt% for- hold varierende fra 59,6 til 72 deler natriumsitrat, fra 14,4 til 17,9 deler ascorbinsyre, fra 12,6 til 7,6 deler natriumpyrofosforsyre og fra 6 til 9.9 deler L-cysteinhydroklorid, og det resterende vann inntil natriumsitratet, ascorbinsyren, natriumpyrofosforsyren og L-cysteinhydrokloridet er løst til en kombinert vekt%-konsentrasjon i løs- ningen på fra 0,25 til minst 2,0 vekt%, idet eksponeringen omfatter at bearbei- det, fersk brokkoli bringes i kontakt med løsningen i løpet av en tid som er tilstrekkelig, slik at kontakten hemmer misfargingen av den bearbeidede, ferske brokkoli når den eksponeres for en atmosfære som ville ha resultert i misfarging av den bearbeidede, ferske brokkoli i fravær av denne kontakt.
