Abstract
Tomatoes are sealed within a film having an O2 permeability of 75-3000 cc./100 sq. in./day and a CO2 permeability of 500-15000 cc/100 sq. in./day, and the sealed package includes a CO2 absorbent and a packet of dessicant material. The amt. of CO2 absorbent is sufficient to maintain 2.5 vol. % CO2 within the package. The amt. of dessicant is sufficient to retard the formation of mould on the tomatoes within the sealed enclosure for 14-21 days, and the dessicant is packed within a film which is water vapour-permeable but which will retain any soln. formed in the packet. The package is capable of limiting the ripening rate of the tomatoes to a one-stage increase in maturation development over a seven day period at room temp. This effect can be achieved without having to evacuate or otherwise modify the package environment during the initial packaging of the fruit. The packaging film is pref. low density polyethylene. The CO2 absorbent is pref. lime. The dessicant is pref. CaCl2 crystals packed within uncoated cellophane.
