Abstract

For keeping cut meat and sausage fresh, an electrically driven slicer with rotating cutter (4), has a hood (8), covering the food to be cut. From a hot air container hot air of about 200/350 deg. celsius is blown through a flexible tube (7), on to the cutting blade (4), to keep it at a temperature of approx. 121 deg.C. The hood (8) is also provided with an anti-bacteria ultra violet lamp and a flexible tube (21) bringing sterilised cool air 18-28 deg. into it in a flow surrounding the goods to be cut. The cut goods move along a cogered conveyor belt with sterile air blown in through the top and ultraviolet lamps underneath to a vacuum packaging machine. The arrangement keeps the sliver blade and meat free from germs and gives longer keeping quality to the cut meat.
