Abstract

Margarines with a reduced tendency to stattering when used for cooking contain, in the fat phase, 0.025 to 1% of a hydrophobic (metal)loid oxide with an av. surface of 50-800 m2/g and an av. prim. particle size of 1-100 mu. Pref. anti-spattering agent is highly voluminous hydrophobic silicon dioxide material, e.g. Aerosil R972 (RTM).
