Abstract

Preservation of meat pieces involves: (a) frying meat in oil, butter, fat and/or margarine; (b) transferring meat to containers e.g. glass pots; (c) diluting formed liq. from frying with water or broth and opt. other additives; (d) transferring formed gravy or sauce to containers so that meat is (almost) completely covered; (e) submerging closed and packed containers in water-filled autoclave at temp. differing by not more than 10 deg. C from that of containers; (g) raising temp. to 80-100 deg. C without pressure being increased from atmospheric; (h) increasing temp. to not above 125 deg. C and closing autoclave at 90-100 deg. C with extra over-pressure of 0.5-1.5 bars being built up during temp. rise by pressurising in gas e.g. air or steam; (i) maintaining temp. of 105-125 deg. C and extra over-pressure for 0.5-5 hrs. to sterilise meat; (j) gradually reducing temp. to 90-70 deg. C, maintaining pressure (almost) constant and (k) releasing over-pressure at 90-70 deg. C and cooling.
