The present invention discloses a concentrated water-in-virgin coconut oil collagen emulsion prepared by high shear homogenization. A total of 20 wt.% collagen hydrolysate was successfully loaded into the emulsion system. Z-average of the collagen droplet is as low as 305.1 nm and rheological properties of the emulsion show shear thinning behaviour, which are appropriate to the needs in cosmetic field.
