Abstract

An object of the present invention is to provide baked chocolate having a crispy and light texture on the surface and a tender and soft texture on the inside, excellent melting in the mouth, and blooming resistance. According to the present invention, baked chocolate contains oils and fats containing oil and fat A and oil and fat B, the oil and fat A containing a palm mid fraction and the oil and fat B containing transesterified oil and fat. Of the total amount of constituent fatty acids contained in the transesterified oil and fat, a saturated fatty acid with a carbon number of 16 to 22 constitutes 20 to 70 mass% and an unsaturated fatty acid with a carbon number of 16 to 22 constitutes 30 to 80 mass%.
