Abstract
A subject of the present invention is to provide a method enabling simple manufacture of heat-resistant chocolate to form a sugar skeleton. The present disclosure is related to a water-in-oil emulsion comprising water in an amount of 50 to 80% by mass and fats and oils having a P-type XOX crystal, wherein X, 0 and XOX indicate as follows: X: saturated fatty acid of 16 or more carbons 0 : oleic acid XOX: triacylglycerol containing Xs bonded to the I-position and the 3-position of glycerol and O bonded to the 2-position. The present disclosure is further related to the water-in-oil emulsion wherein the content ofXOX relative to the fats and oils having a P-type XOX crystal is 20 to 60% by mass, and the total content ofXU2 and U3 is 40 to 80% by mass, wherein U, XU2, and U3 indicate as follows: U: unsaturated fatty acid of 16 or more carbons XU2: triacylglycerol containing one X molecule and two U molecules bonded to glycerol U3: triacylglycerol containing three U molecules bonded to glycerol.
