The present invention relates to a method for extracting polyphenolic compounds from herbal plants and to compositions obtainable by this method. One of the advantages of the present invention is that the present extraction method can be employed for the selective extraction of a wide-range of plant materials. The present extraction procedure is therefore advantageous for many commercial industries, including, e.g., pharmaceutical industries. Another advantage of the method of the present invention, it can be applied to most herbal plants to facilitate higher polyphenols extraction and antioxidant activities. This method is more efficient than organic solvent extraction to enrich the phenolic content in the extracts.
