NAC1 IS SEPARATED FROM A PROTEIN HYDROCHLORIC ACID HYDROLYZATE AT HIGH PURITY. WHEN SEPARATING NACL FROM AN AQUEOUS SOLUTION OF A PROTEIN HYDROCHLORIC ACID HYDROLYZATE, DESALTING IS CONDUCTED AT A TEMPERATURE AT WHICH NACL IS SUPERSATURATED BUT COMPONENTS OTHER THAN NACL WHICH ARE CONTAINED IN AMOUNTS OF 0.5BY WEIGHT OR MORE IN THE PROTEIN HYDROCHLORIC ACID HYDROLYZATE ARE NOT SUPERSATURATED IN THE AQUEOUS SOLUTION OF THE PROTEIN HYDROCHLORIC ACID HYDROLYZATE. IN ACCORDANCE WITH THE METHOD OF THE PRESENT INVENTION, NACL WHICH IS ALMOST FREE FROM AN ATTACHED MOTHER LIQUOR CAN BE REMOVED FROM A PROTEIN HYDROCHLORIC ACID HYDROLYZATE BY MERELY MODIFYING THE EXISTING PROCESS SLIGHTLY WITHOUT THIS HAVING AN INFLUENCE ON THE QUALITY OF THE PRODUCT, AND THE LOSS OF THE AVAILABLE COMPONENTS CAN BE REDUCED.
