La presente invencion describe un almidon retrogradado que tiene más de 55% de almidon resitente con 50% de cadenas de DP 10-35 da origen auna cantidad significativamente mayor de produccion de n-butirato bajo condiciones dque simulan el colo humano; se espera que dicha produccion de n-buritato aumentada disminuya el desarrollo de enfermedades del colon, principalmente cáncer en el colon.
