The present invention describes compositions or formulas for effectively disinfecting vegetables polluted with pathogen and spoilage microorganisms. The aforementioned compositions contain extracts with antimicrobial activity derived from plants, which act in a synergic manner therebetween, these may act by themselves or in combinations with other disinfecting agents, such as organic acids and chlorine compounds and surfactants such as polysorbate 80. The compositions of the invention are able to remove or inactivate the microbial pollution, including that of pathogen microorganisms, in raw vegetables, mainly all type of vegetables without altering the properties thereof.
