Abstract
The present invention relates to a composition that can form an edible coating (RC) that allows the shelf life of minimally processed foods to be extended. The RC can be applied to strawberries and can also be used for minimally processed foods such as other types of fruits (blackberry, raspberry, mango, apple, pear, peach, blueberry) and vegetables (carrot, celery, cucumber) cut into strips and/or cubes, and can even be used on grapes.
