Abstract

El proceso de enriquecimiento de un fructano único proveniente de una mezcla de Agave Tequilana Weber de Jalisco y Agave Augustifolia Haw de Oaxaca con jarabe de agave mostró que no afecta las características prebióticas que tiene de manera innata por enriquecerse una bebida. El método desarrollado de enriquecimiento muestra que el grado de polimerización no se ve afectado, a tal grado que los análisis muestran la misma cantidad adicionada a la bebida utilizando el método HPAEC-PAD. El proceso de enriquecimiento también se validó de manera in vitro reiterando su beneficio prebiótico en 4 cepas Bifidobacteria y 4 cepas Lactobacilli e in vivo en ratones.
