Abstract
The invention relates to a process for producing dried stoneless prunes with preset characteristics, ready for use.The process, according to the invention, copmprises the calibration, cleaning and washing of dried prunes with stones, their hydration in water and/or steam until the stone is freed from the pulp inside the fruit and subsequent aging, separation of stones, determination of moisture and sorting of prunes, their dehydration by heat treatment or steam treatment to achieve a predetermined moisture content, treatment of stoneless prunes with potassium sorbate solution with a predetermined concentration and subsequent packaging of the finished product.
