Abstract

Invention relates to the field of food industry and particularly to methods for producing semi-liquid fruit-juice jelly capable of long term storing. The method provides for use of natural fruit and berry components as raw material. The semi-liquid jelly is obtained by stirring a starch into the mixture of unheated fruit juice, sweetener and water. The stirring is continued permanently. Then the mixture is passed through a flow pasteurisation apparatus during 20...60 seconds heated up to 86...980C temperature. The pasteurised jelly is cooled down and poured aseptically into aseptic package without being in contact with oxygen of the air.
