Abstract

The method is especially efficient for salting fish of big or middle size. The method may be used for salting fish without any initial processing may include cutting of its head and disembowelling, or may be used for fish body so processed only in part. A procedure of injection according to the method is characterised by increased evenness of distribution of solution containing salt or other ingredients injected into fish body and distributed all over its thickness. The method allows to vary a number of puncture places for simultaneous injections in line, number of one-spot injections made one after the other lengthwise fish body or vary an intensity of injection into thickness of fish body. Specific way of injection depends of particular fish sort and way of its initial working up. A device for implementation of the method comprises a membrane-type compressor or hand-operated pump coupled with a vessel for operation at hydraulic pressure up to 2 atmospheres. The vessel is equipped with solution distributing means that may include pressure feeders, such as hoses, terminated by hand-operated valves. Each hand-operated valve is coupled with an injection head in a form of a single needle or needles arranged in a line.
