Abstract
본 발명은 사이클로덱스트린을 제조함에 있어서 전분의 종류에 따라, 완전히 호화되지 않으며 사이클로덱스트린 생성효소가 반응할 수 있는 형태로 전환될 수 있는 적당한 온도에서 전처리없이 전분에서 직접 사이클로덱스트린 생산효소를 반응시켜 사이클로덱스트린을 생산함으로서 생산비용을 낮추고, 단위효소역가당 생산된 사이클로덱스트린의 양을 크게 증대시키며, 미반응 전분을 제거함으로써 고순도의 제품을 얻는 방법에 관한 것이다.According to the present invention, cyclodextrin is produced by reacting cyclodextrin-producing enzymes directly in starch without pretreatment at a suitable temperature that can be converted into a form capable of reacting cyclodextrin synthase. By producing dextrin, the production cost is lowered, the amount of cyclodextrin produced per unit enzyme titer is greatly increased, and a method of obtaining a high purity product by removing unreacted starch is provided.
