Abstract

에이코사펜타엔산(Eicosapentaenoic acid)은 탄소수 20개, 5.8.11.14.17번 탄소에 이중결합을 가지고 있는 ω-3계열의 고도불포화 지방산으로 혈장지질구성의변화를 유도하여 활관성질환 및 동맥경화성질환의 예방과 치료에 효과가 있다고 알려져 있다. 이러한 효과가 있는 EPA는 등푸른 바다생선인 고등어, 정어리로부터 추출하여 생산되고 있으나 추출물에 잔존하게 되는 비린내로 인한 품질저하와 일정한 원료공급에 문제점이 있다.Eicosapentaenoic acid is a polyunsaturated fatty acid of ω-3 series having 20 carbon atoms and a double bond to carbon number 5.8.11.14.17.
