제빵용 효모를 건물당 17% 농도가 되게 가수하여서 된 효모 현탁액과 식염과 에틸알코올을 각각 1-5중량%씩 첨가하여 pH를 3.0-3.5로 조정한 후 슈크로스 패티 에시드 에스터 0.5-1.5중량%를 첨가하여 분당 140-160회의 왕복동 교반기나 분당 200-300회의 회전교반기에서 교반하면서 24시간 자기소화 시킨 다음 원심분리기에서 추출함을 특징으로 하는 효모 엑기스 제조방법.Sucrose patty acid ester 0.5-1.5 wt% after adjusting the pH to 3.0-3.5 by adding 1-5 wt% of yeast suspension, salt and ethyl alcohol, respectively, to which baker's yeast was added at a concentration of 17% per building.
