The present invention relates to a method for manufacturing tea using safflower flowers and rice, and a food composition using the same,
In our country, as the age of the elderly is increasing, they are suffering from work stress or occupational diseases due to work life in various social life halls in their youth. Now that I am older than I was when I was young, I am experiencing various underlying diseases, dementia, stroke, and other problems with blood circulation due to lack of exercise, and the risk of various chronic diseases due to aging of physical organs. It is often not possible to
Accordingly, the present inventors provide a tea using safflower flowers and rice that can be easily drunk or drinkable so as to help the health care of the elderly in Korea, and a method for making tea using safflower flowers and rice It relates to a food composition.
When explaining the materials used in the tea making method using safflower flowers and rice,
Safflower flowers and various types of rice can be used. Ordinary rice can also be used, but GABA rice or hongguk rice containing a lot of functional ingredients is used. And in addition, it relates to a tea manufacturing method using safflower flowers and rice, which can also use fruits such as persimmons, strawberries, peaches, apples, and tomatoes.
Safflower is a biennial plant in the Asteraceae family, blooming between July and September. In oriental medicine, it is used as a medicine to remove blood stasis in the body and to bring out menstruation. It is also good for arteriosclerosis and helps blood circulation. It also lowers cholesterol and is known to be effective in preventing blood clots in the uterus in women.
In particular, it is a beneficial safflower flower that helps prevent geriatric diseases by improving various kinds of fine dust and various wastes caused by high protein food intake and blood turbid due to lack of physical exercise.
In addition to regular rice, salty rice, black rice, and GABA rice, various functional rice has been a staple food for a long time and is non-toxic to eat every day. Research has been actively conducted since it was first discovered, and its molecular weight is 103.2 Daltons, so it is also called piperic acid. It is stable to heat and has high solubility in water.
GABA is a non-protein amino acid that is not found in protein. It is a neurotransmitter in the brain or spine that improves blood flow and increases oxygen supply to the brain, thereby promoting brain metabolism and brain memory. It is known, and the effect of accelerating cerebral blood flow and increasing oxygen supply promotes metabolism of brain cells, thereby improving the aftereffects of stroke and cerebral arteriosclerosis, and thus is used as medicine.
In addition, GABA is a physiologically useful substance because it regulates secretion of growth hormone, relieves pain, stabilizes mental nerves, and lowers blood pressure. GABA with these functions is widely distributed in animals and plants It is abundantly present in the neuromuscular junction of crustaceans and the cerebellum of mammals, and acts as a major inhibitory neurotransmitter in the central nervous system.
Red Yeast Rice is fermented by inoculating rice with red mold of Monascus genus. In addition to starch and protein, monacolin-K, GABA, saponin, unsaturated fatty acids, dietary fiber, selenium, zinc, plant sterol, etc. It contains various nutrients and trace elements and is red in color. It is known that monacolin-K has a cholesterol lowering role, which is the main function of red rice, and GABA has a blood pressure lowering effect. The red and yellow pigments of red yeast have useful value as food coloring agents, but in Korea, research and development of food products using red yeast rice are not very active in functional rice.
The present invention is to use the GABA component or red yeast rice together with various components of rice.
Additionally, the present invention may use a fruit,
Fruit is an invention that can be used by various fruits such as persimmons, strawberries, tomatoes, peaches, and apples.
Representatively, among the fruits used in the present invention, persimmon (persimmon) is a deciduous tree of the persimmon family distributed in northern central China, Japan, and south central Korea. Although there is a small amount of sugar, mainly glucose and fructose contain about 14%. It is widely cultivated and produced throughout Korea. Compared to other fruits, the use of pesticides is less and the taste is high, so the importance of production and consumption is very high. it is fruit As persimmons are shipped all at once like other fruits and vegetables, when the number of days after harvest has elapsed, both the fresh and deintercalated persimmons deteriorate in quality due to respiration and transpiration, and at the same time, ripening progresses and becomes new year. In particular, some persimmons are thinned to produce high-quality persimmons, but these persimmons are unripe and are thrown away as persimmons with astringent taste.
However, these astringent persimmons are foods rich in carbohydrates and vitamins A and C, and have the effect of accelerating intestinal contraction and secretion of intestinal juices and stopping coughing.
The tannins of astringent persimmons are water-soluble and act as a substrate for oxidation and reduction reactions, affecting the color of food by appearing reddish-brown or black. There was a problem. In addition, the utilization rate of peeled persimmons was low in persimmon orchard farms, and there were also problems that naturally felled persimmons (swept persimmons and dried persimmons) due to weather conditions such as typhoons and rainy seasons had no commercial value and no use value, and there were also problems that they could not be reproduced. .
And strawberry (Fragaria × anananassa Duch.) is a perennial crop of the genus Rosaceae Strawberry, which was accidentally crossed between F. virginiana native to eastern North America and F. chiloensis introduced from Chile in South America. It is the paper that was made. Strawberry (Fragaria ananassa Duch.) is a perennial plant belonging to the Rosaceae family, has excellent fragrance and color, and has a well-balanced acidity and sweetness, and has been favorably used in spring for a long time as a fruit and vegetable with a unique fragrance. In particular, the content of vitamin C is higher than that of other fruits, so it has been in the spotlight as a raw food. Strawberries have different ingredients and contents depending on the variety, but generally contain a lot of organic acids, so they have a sour taste and a lot of sugar. It contains various antioxidant substances such as jam, jelly, ice cream, frozen strawberry, syrup, juice and milk processing as processed foods.
또한 딸기의 페놀성 화합물은 엘라그산(ellagic acid), EA-글리코시드(glycoside), 엘라지탄닌류(ellagitannins), 갈로탄닌류(gallotannins),Strawberries contain free and conjugated phenolic compounds and anthocyanins, and are also known to exhibit antioxidant activity and antiproliferative action on HepG2 cells, which are human liver cancer cells. In addition, strawberry phenolic compounds are ellagic acid, EA-glycoside, ellagitannins, gallotannins,
Anthocyanins, flavonols, flavonolscoumaroylglycosides, etc., and the aglycone of flavonol is quercetin and kaempferol. it is known Strawberry's main fragrance components are methyl butanoate, ethyl butanoate, methyl hexanoate, cis-3-hexyl acetate, linalool, etc. turned out to be In addition, many studies have been conducted on antioxidant activity, anthocyanin content, and phenolic components according to the growing temperature, variety, freeze-drying, and storage conditions of strawberries.
Despite these various physiological activities, strawberries have a lot of problems in long-distance movement and sales due to their poor flesh quality and low storability, which leads to a high possibility of spoilage during harvest and transportation. There was a problem with disposal.
Tomato (Lycopersicon esculentum MILL) is a vegetable belonging to the Solanaceae family, and is known to be native to Peru in South America. Tomatoes are perennials in the tropics, but are grown as annuals in temperate regions. In Korea, it is common in Korea for early cultivation, which is usually sown in February or March and transplanted to the main field in early May. Tomato varieties are classified according to ripeness and fruit type, and can be broadly classified into four types: mature type, immature type, pine tomato, and cherry tomato.
These tomatoes have long been known as a health food. Tomatoes contain abundant vitamins and minerals, as well as organic acids (containing citric acid 0.5 to 1%), rutin (vitamin P), free amino acids, fiber, and lycopene. It is eaten or eaten in salads and sandwiches, and is processed into processed foods such as juice, puree, and ketchup.
As such, it is popular as a well-being food containing a large amount of various ingredients useful for the human body, but it has many problems like strawberries to be sold to consumers. Like strawberries, there was a problem that they were discarded locally.
Peach (Prunus Persica) is a temperate deciduous fruit tree belonging to the Rosaceae, Prunus, and Amygdalus.
These peaches have less genetic mutation than apple or pear trees, are capable of early fruiting and self-fertilization, have a unique fragrance and sweetness for consumers, are soft due to their high juiciness, and are rich in vegetable fiber pectin and vitamins A and C to relieve constipation. and has the ability to purify the blood. It is also known to be good for nicotine detoxification, anti-cancer, anti-aging and whitening, thirst quenching, fatigue recovery, and hangover relief in vivo.
However, because peaches have soft flesh and are easily softened in the hot summer, the storage capacity is low, production and shipments fluctuate greatly depending on the weather, and 10-30% of peaches are discarded in the distribution process. have. There is an urgent need to develop new or more diverse processing methods in order to improve the income of farmers using peaches with poor marketability.
Apple (Malus pumila var. dulcissima) is a perennial woody plant classified in the Rosaceae family, and its fruit is known for its excellent sensory properties. The first varieties of apples introduced to Korea were aloe vera, but now, cultivars such as ruby, Busa, and Aori are mainly cultivated.
