더덕(Codonopsis lanceolata)은 사삼 또는 백삼이라고도 불리우는 초롱꽃과에 속하는 여러해살이 덩굴식물로, 원산지는 우리나라이며 일본, 중국 등지에 분포하고 있고, 해발 2,000 m 이상의 높은 산부터 강가, 구릉, 고원지대, 들판, 산기슭 등 도처에 자생하고 있다. 더덕의 뿌리는 도라지 또는 인삼과 비슷하며 덩굴은 보통 털이 없고 자르면 흰색 유액이 나오며, 더덕의 잎은 뾰족하고 긴 형태로 구기잎과 같으나 크기가 더 작고 톱니모양인 것으로 알려져 있다. 더덕은 예전부터 중국에서 약재로 이용되어 왔지만, 우리나라에서는 주로 다양한 식재료로 이용해 왔으며, 사포닌 성분을 다량 함유하고 있어 특유의 아린 맛을 가지고 있고, 강한 고유의 향과 함께 철분 및 칼슘 등의 무기질을 많이 포함하고 있는 알칼리성 식품으로 알려져 있다. 더덕은 호흡기 질환, 암, 당뇨, 염증, 산후병, 해독 등에 효과가 좋아 약재로 사용될 뿐만 아니라, 최근 식생활의 서구화, 운동부족 및 누적되는 스트레스로 발생하는 각종 성인병으로 고민하는 현대인들에게 자양강장 및 피로회복 효과와 함께 풍부한 식이섬유 및 비타민을 함유하는 기능성 식품으로 더덕에 대한 관심이 증가하고 있다.
