Abstract

The present invention relates to a method of obtaining hydrolysates containing useful materials from fresh ginseng in a semi-continuous manner by using subcritical water. The fresh ginseng hydrolysates obtained according to the present invention contain a high content of useful materials in the hydrolysates, show antioxidant effects and the like, and can suppress various biological activities associated with a disease or can promote biological activities associated with the suppression of a disease. Accordingly, the fresh ginseng hydrolysates can be used as a raw material for medicines for treating and preventing diseases or can be added as a functional material to functional cosmetics, functional foods, or the like. In addition, the method of the present invention can reduce the cost and time in obtaining of the hydrolysates; and can be utilized as a large-batch process, and thus can be easily applied commercially.
