Abstract

A method of manufacturing edible oil using bramble seed as raw material by extracting roasted bramble seed with hexane is provided. The method recycles bramble seed which is hitherto used as livestock feed or fertilizer and produces edible oil with an unsaturated fatty acid content of more than 90%. A bramble seed is dried, roasted at more than 100deg.C for 3 to 30min while stirring, ground and extracted with 100 to 200ml hexane per 100g bramble seed powder at 40 to 70deg.C for 10 to 40min. The bramble seed extract is filtered and hexane is evaporated from the extract to obtain oil which is then purified to produce edible oil containing an unsaturated fatty acid content of more than 90%. The bramble seed is one or two or more seeds selected from Rubus idaeus seed, Rubus coreanus seed, raspberry seed, black berry seed and boysenberry seed.

본 발명은 나무딸기류 씨앗을 원료로 하는 식용유의 제조방법에 관한 것으로서, 보다 구체적으로는 종래 가축의 사료나 비료 등으로 사용되어온 가공 부산물인 나무딸기류 씨앗으로부터 부가가치가 높은 식용유를 제조하는 방법에 관한 것이다.The present invention relates to a method for producing edible oil using raspberry seeds as a raw material, and more particularly, to a method for producing high value-added edible oil from raspberry seeds, which are processed by-products that have been used as feed or fertilizer for livestock. .

나무딸기속은 장미과에 속하며 호주와 남극을 제외한 세계 각국에 450-750여 종이 분포하고 있다. 이중 한국에도 20여 종이 분포하고 있으며, 복분자 딸기, 산딸기, 라즈베리, 블랙베리, 보이센베리, 라즈베리 등이 모두 이에 속한다. 나무딸기류에는 항산화 물질인 비타민C가 있고, 각폴리페놀, 안토시안 등 인체에 유익한 물질이 다량 함유되어 있다는 것이 밝혀지면서 국내에서는 나무딸기류의 재배가 점차 증가하고 있고, 그 소비시장 또한 커지고 있다. 나무딸기류는 생과로 섭취하기도 하지만, 대부분 가공품으로 유통되고 있다. 특히 가공품 중에서도 발효주 형태로 가공되어 유통되는 것이 대부분이다. 나무딸기류를 가공하고 나면 씨앗 등이 남아 현재는 가축의 사료나 비료로 사용되거나 폐기되고 있다. 과일 중 씨앗의 양은 과일의 전체 중량 대비 3~15중량%이고, 수분이 제거된 과일의 전체중량대비 15∼75중량%로 상당량을 차지하고 있어 이를 활용하여 부가가치를 높일 필요가 있었다.Raspberry belongs to the family Rosaceae, with more than 450-750 species distributed throughout the world except Australia and Antarctica.
