Abstract

PURPOSE: Provided is a manufacturing method of cake by using yaksik which is a korean traditional food. Therefore, the manufactured cake has much less sweet than a cake manufactured by bread and cream, and satisfies consumer's taste preference. CONSTITUTION: The manufacturing method of cake is characterized by using yaksik which is prepared by steaming glutenous rice at high temperature then compression molding it in a molding frame.

케익은 서양에서 도입되어 지금은 개인의 생일, 결혼등 각종행사에 널리 사용되고 있다. 케익을 구성하는 재료로는 주로 빵과 크림을 사용해서 만들어 왔으며 최근에는 일부 떡, 아이스크림으로도 만들고 있다Cakes have been introduced in the West and are now widely used for personal birthdays and weddings.
