이상과 같이 본 발명은 누룽지가 갈변되면서 카보닐화합물이 생성되어 고소한 맛을 생성하게 된다. 또한 누룽지 제조시 밥을 하는 과정이 생략되어 누룽지를 쉽고 빠르게 제조하는게 가능하여 지금보다 훨씬 저렴한 가격에 제공하는게 가능하다. 또한 다양한 식용으로 사용이 쉽고, 알갱이 형태라서 포장도 매우 용이하며 그로 인하여 수출을 하기도 매우 유리하다. 볶은곡물은 볶는 과정에서 팽화되면서 곡물 내부에 공간이 많이 형성되어 푸석푸석 하고 점성이 없다. 하지만 누룽지는 곡물 내부의 수분으로 인하여 증숙되면서 점성을 갖게되고 그로 인하여 공간층이 거의 없이 곡물내부가 서로 결합력 갖게 되어 밥을 해도 쫀득한 맛을 유지할 수 있는 것이다.As described above, the present invention produces a savory taste by generating a carbonyl compound as the nurungji turns brown. 상기 누룽지 조성물은 누룽지곡물, 누룽지분말, 누룽지추출물 중, 1가지 이상으로 제조되어 제공하도록 이루어지며,
상기 누룽지 조성물은 탄산음료, 무탄산음료, 유제품음료, 알코올음료, 과자, 가공식품, 소스 중, 1가지 이상에 누룽지가 혼합되도록 제조되는 것을 특징으로 하는 누룽지 조성물.
