표 II-1 ~ II-5 에 나타낸 배합으로 성분들을 통상적인 방법에 따라 혼합하여 생지를 얻어서 시트 성형을 통해 스틱 모양 구운 과자를 만들었다. 이 생지를 실온에서 90 분간 내버려 둔 후, 롤을 이용하여 두께 2.5mm 의 시트 모양으로 압연했다. 이어 폭 3.7mm 의 국수 모양으로 재단한 후, 길이를 120mm 로 맞춘다. 다음에 이를 인산 삼나트륨 6 % 용액에 3 초간 침지한 후, 300 ℃ ~ 100 ℃ 의 터널 오븐에서 수분 1.5 % 까지 6 분간 소성하였다.In the formulations shown in Tables II-1 to II-5, the ingredients were mixed according to a conventional method to obtain dough, and a stick-shaped baked confectionery was made through sheet molding.
