- 카바크롤(carvacrol) 및 티몰(thymol)로 이루어진 군으로부터 선택되는 1종의 에센셜 오일과 염화나트륨(NaCl)을 포함하며,
조성물 총 중량에 대하여,
상기 카바크롤을 0.00784 내지 0.0315 중량% 및 상기 염화나트륨을 15 중량%로 포함하고, 4 내지 37℃ 조건에서 5 내지 10분 동안 식품에 처리하거나,
상기 카바크롤을 0.0236 내지 0.0315 중량% 및 상기 염화나트륨을 10 내지 15 중량%로 포함하고, 4 내지 37℃ 조건에서 1 내지 10분 동안 식품에 처리하거나,
상기 카바크롤을 0.0315 중량% 및 상기 염화나트륨을 5 내지 15 중량%로 포함하고, 4 내지 37℃ 조건에서 1 내지 10분 동안 식품에 처리하거나,
상기 티몰을 0.00786 내지 0.0315 중량% 및 상기 염화나트륨을 15 중량%로 포함하고, 4 내지 37℃ 조건에서 5 내지 10분 동안 식품에 처리하거나,
상기 티몰을 0.0157 내지 0.0315 중량% 및 상기 염화나트륨을 15 중량%로 포함하고, 4 내지 37℃ 조건에서 1 내지 10분 동안 식품에 처리하거나,
상기 티몰을 0.0236 내지 0.0315 중량% 및 상기 염화나트륨을 10 내지 15 중량%로 포함하고, 4 내지 37℃ 조건에서 1 내지 10분 동안 식품에 처리하거나,
상기 티몰을 0.0315 중량% 및 상기 염화나트륨을 10 내지 15 중량%로 포함하고, 4 내지 37℃ 조건에서 1 내지 10분 동안 식품에 처리하는 경우 항균 효과를 가지는 것을 특징으로 하는 항균용 식품 조성물. - 제1항에 있어서, 상기 조성물은 식중독균에 대해 항균 효과를 갖는 것을 특징으로 하는, 항균용 식품 조성물.
- 제1항에 있어서, 상기 조성물은 크로모박테리움 바일레큠 (C. violaceum), 슈도모나스 애루지노사 (P. aeruginosa), 대장균 (E. coli), 파스튜렐라 헤몰리티카 (P. hemolytica), 황색 포도상구균 (S. aureus), 살모넬라 콜라라수이스 (S. cholerasuis). 리스테리아 모노사이토제네스 (L. monocytogenes), 살모넬라 티피뮤리움 (S. Typhimurium) 캠필로박터 제주니(Campylobacter jejuni), 여시니아 엔테로콜리티카(Yersinia enterocolitica), 크로노박터균(Cronobacter spp.), 이질균(Shigella spp.), 비브리오균(Vibrio spp.), 클로스트리디움 속균(Clostridium perfringens, Clostridium botulinum) 및 바실러스균(Bacillus spp.)으로 이루어진 군에서 선택된 1종 이상의 균주에 대해 항균 효과를 갖는 것을 특징으로 하는, 항균용 식품 조성물.
- 제1항 내지 제3항 중 어느 한 항의 항균용 식품 조성물을 4 내지 37℃ 조건에서 1 내지 10분 동안 식품에 처리하는 단계를 포함하는, 항균 방법.
